I order fillets because I am one of those people who cannot stand to have fat in my mouth. Chicken breasts are easy for me, also ground beef, and I always joke to my husband I could easily be a vegetarian because of this. On our first order, we were anxious to try our meats as Maine is closer to us than the other company we had ordered from (although we had no issue with them). We tried the fillet. We normally had ordered 4 oz fillets (we are elderly and don't eat as big of portions as we used to), We firgured we would split the 8 oz fillet. I had a long piece of gristle that took a huge hunk of meat from my 4 oz portion of meat. Also, my husband had to trim the fillet prior to cooking it. Not a great start. Let's go upwards from here, because I have a whole box of meat that will last me 6 mos +. On a good note, the taste of the meat, I did get a few bites, was really good, but I should have gotten 4 oz of bites not more like 2 oz.
