I just had to offer my praise for the spatchcock chicken and the ease of preparation. It took about 2 days to thaw in the refrigerator so plan ahead. I then mixed white miso, a heaping tablespoon of crushed garlic, and a sliced lemon, all of which I rubbed under the skin of the chicken. I then added thin pats of butter on top of the rub. A little sprinkle of salt and heavier sprinkle of pepper on top of the skin before placing the chicken in a large well oiled (about 1 tablespoon of avocado oil) cast iron skillet. Oven was preheated to 425F and I roasted for 1 hr (checking the temp in the thickest part of the breast). I then let it rest in the pants for 10 minutes. It looked amazing and better yet, was the best chicken I ever roasted! So easy and I would serve this to anyone!

My mission was to find all natural meats without all the garbage. Also supporting small farms is high on my list. There are a couple local farms in my area, but they are quite a drive away. This company was one of the few that ship to my area, so I gave them a try.
Package came fast and still frozen. I've been trying out several cuts, and so far am pleased with everything. Included in the boxes was some literature explaining where the cuts come from and cooking suggestions. The steaks are leaner than grain fed, so you have to get used to adjusting your cook. Some trimming of silver skin might be necessary, but no big deal. The ground is awesome and I've been using it up in several dishes.
I recently purchased some pork and a beef brisket. Pork chops are nice and thick with that dark pink color. Much tastier than the super market chops. I'll be setting up the smoker soon for the brisket. Mouth's watering just thinking about it.
