Marrow Bones
I placed my first Heartstone Farm order last week which included a few pounds of beef marrow bones to make some bone broth and soups. They arrived frozen, clean, and full of beautiful marrow which formed the base of a few delicious homemade soups. I'm looking forward to trying the brisket later this week.

I bought these bones to make Gom Tang (Korean Oxtail Bone Broth) and they were high quality and meatier than other places.
Keep in mind that they come fully intact (it's about 9" in length/3 separate bones) but as you cook down, the bone joints will come apart and it will look like the example photo. I'm sure you could also defrost and cut the bones at the joints as well.
While I was initially surprised by the size when the oxtails arrived, since cooking with it, I'm seeing the value in having the tail intact. So much collagen!

Well we haven't tried the patties yet, but we did cook the 2 filet's last night and they were fantastic! Just like the instructions, you have to sear for a minute, and then bring temps down low. Cooks fast and was super tender and flavorful. You can really taste the difference. Thanks Farmer Dan! We will cook up the patties during the week!
