So I rubbed some pork tenderloins with this stuff, cooked it up and BAM! We're ready for the first taste. Well the heat kept building and building until I thought WOW that's hot! Not wanting to waste the precious meat that we just spent some much time preparing I figured out ways to work with it. First off, the temp of the meat plus the spice of the rub almost work together to make it doubly spicy IMO when it first come off the grill. So don't be afraid to let the meat rest properly. I also found that pairing the meat with something cool and refreshing helps tame the spice ie. sour cream, or applesauce. Even something simple like BBQ sauce. Slightly warmed the next day in the microwave for about 25 seconds seems less aggressive than straight off the grill.
