I hadn't had grocery store beef, or much beef at all, for a long time. Factory feedlot beef tasted too much like corn and misery. I was infrequently treating myself to grassfed ground wagyu from New Zealand but it was impractical, and I wanted to stay in the US. I tried your chuck roast and ground steak patties. Yum! Just yum! The steak patties were great. A good ratio of fat to meat, and because it's a bit more healthful I like to keep the fat for a quick saute with spices for veg like green beans. I made stew with the chuck, another hit! I'll be canning meat later so you'll definitely be seeing me again.
(You might want to consider raising a wagyu cow or two. Very different flavor)
