We're grateful to have stumbled upon Heartstone Farm, a local Maine farm, to support for raising, packaging, and delivering fantastic organic whole chicken and grass-fed beef liver. We thoroughly enjoyed the whole chicken and made a great bone broth with the carcass.
The price for whole chicken is quite high though, regardless of how good we feel about it.

Beef Heart - DISCONTINUED
The heart was fantastic. I cooked it with onion, garlic, carrots, celery, poblano and jalapeño peppers, and beef bone broth in an Instant Pot on high pressure for an hour. Then I let the pot gradually release pressure for 30+ minutes. It made for an incredibly tender piece of meat. I've had it with couscous cooked in the pot gravy and with mashed potatoes.

My Tide Mill chicken arrived cold (very important) because of the packaging. I cooked the breast meat and it tasted like the chicken. I use to raise a few broilers in my younger days so I know when chicken taste delicious. Thanks again for giving us the chance to purchase this delicious chicken.

Chicken Thighs (with skin and bone)
The Heartstone Farm organic bone in skin on chicken thighs are excellent. The flavor, moistness and texture are outstanding. I seared the chicken thighs skin side down over medium heat for about 3-5 minutes then placed skin side up in a preheated 375 degree oven to finish. I removed the chicken to rest and deglazed the pan with white wine and a splash of honey balsamic vinegar for a quick pan sauce. The chicken was nicely packaged, too.

The Maine Box - 34 Pounds of Steaks and More
Hands down the best beef I have ever had, especially in late summer after they have had fresh green grass to graze on for several months. Got to meet farmer Dan at the store front and he is great to talk to and very friendly. Beware though, once you taste this beef, anything store bought results in disappointment.
