Casings were tied with nylon string which is fine but I've been stuffing and tieing with loop string used for hanging and using oven and cooking horizontal ! The previous order had old school string which held the knot tension better . No biggie I just have to get some regular butcher string I've never smoked my summer sausage because years ago I was told that smoke wouldn't penetrate casing anyhow?!?!?

Most sausage casings (the ones you used included) are designed to allow smoke to penetrate the casing. Definitely try smoking your summer sausage sometime and see what you think about the difference!
