I was born and raised in Philadelphia, so I consider a Philly cheesesteak to be haut cuisine. But, in the 40 years I have lived in Maine, I have not found any place that really makes an authentic one. So, when I have one it is generally when I make it myself at home. While I have always thought the shaved steak I bought at the local supermarket chains was okay, trying to find really good sub rolls was still a problem. So I ordered Heartsone Farms shaved steak for making Philly cheesesteaks at home. I used half of a one pound package. sliced it into smaller pieces, and dried it so it would sear and not poach in its own juices. I fried some mushrooms and onions, and put a couple pieces of provolone on the roll and heated it briefly so it would melt. I will try to attach the photo I took when it was done, but I put the cheese, mushrooms, and onions on the roll first so it wouldn't hide the steak in the photo. I found the shaved steak to be really flavorful, way better than what I had getting from the supermarket. It was also very tender, which isn't surprising because it is shaved so thin. Like it has done with its ground beef, Heartsone Farm has made the effort to elevate the meat for a simple dish like a cheesesteak.
And, for my Philly-born taste, it shows in the finished product. Now, if only I could find decent rolls!

Occassional Chuck steaks n way too much tuna got me through my college years. Hadn't had any chuck steak in decades. As w/all of Dan's meats, these steaks arrived butchered n sealed as pretty as you please. His butcher really does an exemplary job. Had one of these the other night. It was delicious. Much cheaper than Rib Eye steak, n tastes even better (I like the fat). Thanks, Dan.
