German knives are softer steel so get dull faster. Japanese knives are sharper but really delicate due to narrow carbon steel covered by cladding. The more layers of cladding the narrower the inner layer, the more subject to chipping.
So comes the Apogee Dragon knife. Chisel steel with a Rockwell hardness of 63, stays sharp longer. No cladding, the steel is the same, throughout, Little or no chipping. The Micarta handle is top two in the world. The Yaxell finish is superb.
