Shun Classic 8" Kiritsuke Knife (DM0771)
The Shun kiritsuke is my favorite knife overall to use in the kitchen. Aside from my set of specific boning knives, I use this knife for everything. Unbelievable julienne cuts from such a thin spined yet strong steel, you really notice the difference between Japanese and European blades. I love the 15 degree edge. Very much like a fine boning knife and not a sharpened steel wedge Henkles I had lost in a move and I replaced with this. Beware the length of the blade at the handle end. That little spike can get you if your grip isn't just-so.

Shun Premier 7" Santoku Knife (TDM0702)
I absolutely love my new knife. I have used it for close to a week and still have all my fingers! I cooked a turkey this week and my brother used it for carving - he loved it (even though it is not a carving knife, I don’t believe) It cuts vegetables like soft butter - I would like to own a complete set!

I haven't had it for very long, but it is very sharp and balanced. Just wash it by hand and it should last a long time.
