The knife, is absolutely the best knife I've ever had. I used to work in Earls' kitchens for 7 years as a line cook through high school and university. I'd like to think we had some pretty good/sharp knives and learned good technique for using knives. I've had my Shun knife for three months now, and this thing is like a lightsaber. Absolutely worth it.
