I along with 3 of my friends make 18-28 Capicola along with Sausage (made from the trimmings) every year. Last year was the first time using your Charcuterie Bags and Capicola Recipe and the results were absolutely great! I personally have been making these items for over 25 years and the information you provide along with your UMAI Bags have helped me tremendously. I recently made a curing chamber so we can make different cured/aged meats all year around and UMAI Dry will be our wrapping choic from now on. My next try will be a Bresaola....Keep up the great work, thanks...

There was a large learning curve. Seemed simple enough to vacuum seal a large bag but since it was way too wide to fit, had to seal corners first. Then I was able to work on the actual vacuum sealing using the strips. They were not working at first and took many tries to seal. Finally sealed and checked on it 7 days later. The bag was loose and I had to seal all over again. 4 days later it was the same. Tried to contact UMAi via the support but still have not responded. I was finally able to find that the bag had a small hole in it which caused the leaking. So used the 2nd of 3 bags and the last of the 5 strips and was able to get a good seal. Took it out after 28 days. Next time will go for up to 48 to see what the difference is. Asked my wife what she thought about the steak and she said it was more beefy which is exactly what it was suppose to be. So, now that I know how to use the bags, will get more bags and strips and continue doing this. The low score is because of the lack of customer support.

This was an absolute nightmare. The bags did not work as advertised and I ended up ruining a 5lb rib roast. There is almost 0 support from the manufacturer - if not for a Facebook group moderated by end-users, I would have just given up.

Do not buy this product.

Dry aged a strip loin and the steaks were better than all but the best steakhouses I have been to, and it was not even prime meat. Would highly recommend the dry bags for at home dry aging

The product works as advertised, but the cost per is excessive, it’s almost $.75 per steak. I feel you are mistakenly over charging for an excellent product. It’s a plastic derivative not a natural skin. I have used the product for rears, yet you continue to gouge your consumers. Either you feel you maximized your market share or content on a profitable low volume business. Every time I buy more bags, It upsets me due to the cost.
Interesting, your next question is: would I recommend this product to a friend, yes, but once they hear the cost, they ask me if I’m nuts, so I don’t refer the product. I just keep it a secret.
