I have started ageing a 5kg rib steak piece of meat and after 5 days, I can see the meat changing colour in the right way. I am still in the ageing process so I have not yet tried the final product. However, I had a bad experience vacuum sealing the bag. After following the directives many times, reading on forums, trying alternative solutions, I was never able to vacuum the bag. The vacuum mouse didn't work nor did other solutions mentioned on forums. I doubt my winston vacuum sealer is to blame since it works wonders in general. This said, I managed to seal it with as little air inside as possible but not all the surface of the meat is in contact with the bag as it should be. Very disappointing considering the high price tag of the bags.

With UMAi bags, I've made over 30 capicolas from the coppa portion of Costco Pork Butts. Never fails. Without a doubt it is the best capicola my family has ever had. No need to fuss with hog or beef casings. I brine (cure) for 14 days and dry to 65% of original weight in 3-4 weeks. I have also made fennel salami and pepperoni with the UMAi casing tubes. I am in the process of doing two coppa and two bresaola using UMAI bags. The weight loss appears to be quicker then the traditional method. I am approaching 15-20% loss on my traditional method coppa which were started 48 days ago. The ones in the fridge are at 10.7 -12.2% loss after 13 days. If the coppa and bresaola in the UMAI bags taste great then I may change my methods for a more modern method.
