Wonderful product! I use it all the time for aging large cuts of beef. For Charcuterie and Salumi which requires longer cure times, I have found that the UMAI Dry bag method is the best choice by far.

It's a new and fun cooking experience. I like to cook many different ways, from traditional grilling and smoking to sous vide and Moroccan tagine. The Umai Dry bags make it easier for me to delve into charcuterie, sausage making and aging of fine beef. My first attempts at capicola and lomo were a success, although I'll bet will be better next time. I just unbagged a 30 day dry aged strip ****, which I trimmed, cut up and froze in individual vacuum bags for later sous vide. Next up, aged rib eyes. UmaiDry's videos are enjoyable and very informative. The web site is easy to navigate and order. Delivery is great. Thanks, Umai Dry. But, as I heard from Ballistic BBQ, why do you call them "vac mouses?"
