I am 17 days into a 28 day dry age of a strip loin I got from Costco. I'll give it 5 stars for delivery, product quality, and instructions. However, the proof will be when I open it up next weekend and give it the taste test.

I had the most difficult time trying to vac seal the rib-eye roast. I have an automatic Food Saver and went bought another one where I can operate it manually. I have watched several videos on this process and followed it to a tee. I used two bags and several mouse vac strips. I finally got it to seal properly and then checked in on the seal several hours later, and it seems to have air back in to the Umai bag. I'm beside myself.

Just unwrapped a 17 lb primal cut ribeye from an umai dry bag. It sat in a stand alone refiridgerator for 30 days. It made a beautiful transformation during the four week process. The wait was well worth all the effort. I cooked the steaks on an open char coal grill and they were quite delicious. Amazing tenderness and flavor. I look forward to dry aging more cuts of beef with umai dry bags.this umai bag concept works. Follow the instructions , and be prepared to wait it out.

I've used the UMAI bags 4 times now to dry age a whole ribeye and they've worked flawlessly every time. I have one in the making now for Memorial Day that will be 57 days when I cut it. If you have a problem, chances are it's your vacuum sealer and not the bags.
