More than just a boning knife.

Shun Classic 6" Boning Knife (DM0743)
I picked up this to add to my Shun Classic collection and compliment a honesuki custom knife for boning and trimming poultry, but this knife became my go to for trimming and cleaning up most meats, poultry, and fish.
Excellent for breaking down larger cuts, and exceptional at trimming silverskin off of beef and pork.
A super sharp edge and a very comfortable handle make it a pleasure to use!

SENCUT Vyrce Shredded G10 Blue (S25104-2)
Decently sharp out of the box. Ergonomics aren’t bad. My only caveat is the release is quite stiff. I should’ve probably got a button release for my old hands.

Could be worth trying to loosen the main pivot a quarter turn, it should release much smoother!

Sorry to hear its not 100% what you were expecting. In the write up it does further explain "The blade edge is serrated at the front and back, but has a fine edge in the middle" but I can understand if you only read the title. Thank you for the review Francois

The blade does not open easily and smoothly. Unfortunate since that knife was not inexpensive.
They were very kind to reach out and explain reasons why this is the case. Thank you for the info. Still very happy with the product and great customer service.
