Wusthof Classic 9" Chef Knife (4582-7/23;1040100123)
The 9" classic Wusthof has been without a doubt the best all-around knife I have ever used. At the slightly unconventional length you get what I feel is the best of both worlds. You get the ability to perform fine detail cuts without the blade being so long as to be unwieldy, yet you have that little bit of extra length to chop big piles of herbs or other items. I have been working in kitchens for 15 years and have never been let down by mine. With proper care (rinsing immediately after cutting tomatoes, citrus, etc) and NEVER going through the dishwasher you can rely on this knife for years of hard daily use. I can use mine to hack through the spines of 4ft. long ling cod or 40lb halibut and, after only a couple of passes on the steel, be chiffonading herbs.

Shun Classic 6.5" Nakiri Knife (DM0728)
I bought this as a gift and seems how I'm prone to cut myself with sharp knives, I stay away. However, my husbsnd really really likes the knife. I will slowly purchase the whole set for him. Thank you

This is the 5th leek I’ve bought. They are that good. Super slim profile, actuation is clean and crisp, factory edge is better than most. Great for EDC.
