Kori Artisan 9" Bread Knife (7855-23)
Received as a Christmas gift, nice box and presentation. Very nice-looking knife, great feel on the handle, good weight and balance. Love the hammered surface, even the engraving saying, "Japanese Core". However, I am quite disappointed with the fact that this is a Chinese made knife. For this price you can buy nice-looking "Real" Japanese knives!

KIYA Nanbu Kurouchi 210mm Gyuto (3-129)
This is my first ever premium chefs knife, and first Japanese knife. Out of the box it came with some light scratching on the side, and a bur where the blade tapers into the handle, where my middle finger would rest while pinch gripping. These don't inhibit the function of the knife, but for this price I would expect the finishing to be perfect.
Out of the box, it cuts better than my old kitchen knife, but it's not as smooth as I was expecting. I will try improving the edge when my whetstone arrive; these knives are supposed to have better sharpening potential. People new to this style of knife should be aware while it is better at cutting, it has many limitations that regular knives don't.
Pros:
- cuts better
Cons:
- must be washed and dried throughout cooking process, it will spot rust in minutes
- shouldn't use for chopping hard foods
- shouldn't be used for scooping or moving food around board

Shun Combination Whetstone Rubber Base 1000/3000 Grit (SSM0800)
Not really am experienced knife sharpener, but so far so good. The 1000 is able make a nice edge without taking too much off, while the 3000 does a great job polishing and finishing the edge. It did take multiple of usage before before a good slurry built up. The only thing I would improve on is the rubber base, it still slips a bit.

Spyderco Strech 2 XL Lighweight Serrated (C258SBK)
I owned a Spyderco 20 years ago and used it hard. If possible the quality has only improved. The Stretch 2XL locks up super tight. The grip is amazingly good. The knife balances perfectly in the hand. So light I forget it's in my pocket. And of course it's sharp sharp sharp. I bought the fully serated model. Thanks HoK.

As long as you use the right cutting board ;) you should be good on the edge retention, hone often and always remember, dont hack at anything you would try to bite through with your teeth!
